It’s officially Halloween season, and this year, the post-apocalyptic world of Fallout made a terrifying leap from the screen and games straight into a Halloween Horror Nights (HHN) haunted house. To prepare ourselves for confronting The Ghoul and escaping the wasteland, we grabbed a bag of the officially licensed Valiant Vanilla coffee from one of our favorite online roaster, Bones Coffee Company!

- Appearance: As a medium roast, the coffee brews up with a nice rich brown color.
🔧 The Brewing Setup: Grind Matters!
For maximum freshness—whether it’s our favorite roast from Bones Coffee or Joffrey’s Coffee—we always buy whole bean and love that both roasters use easy resealable bags to lock in the flavor until we need it. We only grind our beans right before brewing using our dependable Capresso Infinity Conical Burr Grinder.

🔧 Brewing Methods: Drip vs. Cold Brew
To truly test the versatility of this “Valiant Vanilla” brew, we enjoyed it using two different methods:
- 🔥 Hot Brew (Drip Coffee): We used the Ninja CFP Series 32 Coffee Maker (available on Amazon here) for a clean, consistent temperature extraction. The hot brew is bold and highly aromatic.
- ❄️ Cold Brew Tip: We prepared a smooth concentrate using our Takeya Cold Brew Coffee Maker (a handy tool we picked up from our friends at Joffrey’s Coffee).
- Our Process: We brew for approximately 24 hours. Then, we filter the concentrate through standard recycled cone paper filters for a super clean finish.
- The Epic Ratio: Once filtered, we mix the concentrate with filtered water in a 1:1 ratio (50% water and 50% cold brew) for the perfect balance of flavor and strength. The cold brew method enhances the natural sweetness and truly brings out the delicate vanilla wafer note, making it incredibly refreshing.
👅 The Taste Test: Ad Victoriam or Total Wasteland?
This coffee is a huge win for fans of vanilla-flavored coffee. The flavor is described as Vanilla Wafer, and it absolutely delivers.

💡 Verdict: Valiant Vanilla is a fantastic flavored coffee. It has a nostalgic, comforting vanilla and cookie flavor that is strong but not artificial. It’s an excellent choice whether you like it black, or use it as a flavorful base for your cream and sugar.
🍌 The Perfect Post-Apocalyptic Pairing: Toffee-Banana Bars
Every Vault Dweller needs a high-energy snack, and every coffee needs a perfect pairing! We decided to bake up a batch of delicious, moist, and gooey Condensed Milk Banana Bread Bars from Ania over at Taffey Bakery.
Inspired by the Valiant Vanilla‘s cookie notes and the post-apocalyptic need for a flavor punch, we made a crucial adjustment to the recipe:
- Our Magically Epic Swap: We subbed out half of the semi-sweet chocolate chips and replaced them with Heath Toffee Chips (50% chocolate chips, 50% toffee chips).
The result? The creamy, caramelized condensed milk and sweet banana are beautifully countered by the salty, crunchy toffee. That toffee note then locks in perfectly with the warm, buttery vanilla flavor of the coffee, creating a dessert pairing that truly feels like a Magically Epic indulgence.
